Fish Maw - Mushroom Stew Recipe


Ingredients: 

  • Chicken Drumlets and Wings                6 pcs each
  • Garlic                                                    10 Cloves
  • Ginger                                                   1 inch
  • Water                                                    700ml
  • Abalone Scallop Sauce                        4 Tablespoons
  • Sweet Peas                                          150g
  • Scallops                                                5 Pieces (Big)
  • Fish Maw                                              150g, blanched
  • Salt                                                       1 Tablespoon   
  • Cooking Oil                                           3 Tablespoons

Instructions:

  1. Marinate chicken drumlets and wings with salt and scallop sauce
  2. Put in oil, garlic cloves, and ginger slices into a pot and stir fry on medium heat
  3. Put in chicken and mushrooms and add in 700ml of water
  4. Closed the lid and let it simmer on medium heat for 15 minutes
  5. After 15 minutes, add in sweet peas, scallops, and fish maw into the stew
  6. Give it a quick stir. Close the lid and let it simmer on medium low heat for 45 minutes
  7. Garnish with coriander and sliced chilies and the stew is ready to serve
  8. Serve warm
